We might not be able to throw a party, but that doesn't mean we can't make a batch of margaritas and make the best of it!
Last year we threw a super fun Cinco de Mayo party with our friends and family and it was such a fun excuse to get together and make some of my favorite food. Who doesn't love fresh pico de gallo, guacamole, taco's and margaritas? So today I'm sharing a few of our house favorites below. Make a batch and don't forget to tag me on Insta so we can have a virtual party together!
3 jalapeños diced small (adjust based on the amount of heat you want)
2 ripe mangos
1 cup diced fresh pineapple
6 cloves of garlic
1/4 cup extra virgin olive oil
2 tsp kosher salt
1 lime juiced
Fresh cilantro to taste
If using a food processor make sure to dice all ingredients individually. This will allow you to control the consistency of your salsa. Allow tomatoes and pineapple to drain in a colander prior to mixing with other ingredients. Make ahead and allow to sit in the refrigerator for a few hours to allow the flavours to develop. You can add additional jalapeño if you prefer a hotter salsa. This one is a crowd pleaser and mild on the heat due to all the fresh fruit in it!
Serve with Tortilla chips and a fresh margarita. Its also the perfect salsa for tacos!
Spicy Coconut Pineapple Margarita - Makes 2
3 oz coconut water
2 oz fresh pureed pineapple
3 slices of jalapeno
2 oz pineapple juice
4 oz tequila
Juice from half of a lime
Pink Himalayan salt for the rim
Combine all ingredients in a shaker with a bit of ice. Shake well.
Rub the rim of your glass with a wedge of lime and dip it into your salt dish. Pour the shaken margarita into your glass and enjoy!
Smoky Mezcal Margarita - Makes 2
3 oz pineapple juice
1.5 oz triple sec
1.5 oz mezcal
3 oz San pelligrino Arancita
Juice of 1/2 a lime
Kosher Salt
Combine all ingredients in a shaker with a bit of ice. Shake well!
Rub the rim of your glass with a wedge of lime and dip it into your salt dish. Pour the shaken margarita into your glass and enjoy!

and a Cricuit machine. I love how festive they made the house for hardly any money and we stored them away to use year after year.
