A fun twist on a classic bruschetta recipe for your next halloween party!

My go to BOO-schetta recipe with a Halloween twist!


Ingredients


• 1 baguette or Italian loaf, sliced into ½-inch thick slices

• 3-4 ripe tomatoes, diced

• ½ purple onion, diced

• 2 cloves garlic, minced (plus 1 clove for rubbing on bread)

• ¼ cup fresh basil, chopped

• 2 tbsp extra virgin olive oil

• A splash of white wine vinegar

• Salt and pepper to taste

• Fresh mozzarella cheese ball, sliced

• Balsamic glaze (for drizzling and decorating)


Instructions


1. Prepare the Topping: In a medium bowl, combine the diced tomatoes, diced purple onion, minced garlic, chopped basil, olive oil, and a splash of white wine vinegar. Season with salt and pepper to taste. Allow the mixture to sit for 10-15 minutes for the flavors to meld.

2. Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the bread slices on a baking sheet. Lightly brush each slice with olive oil, then toast in the oven for 5-7 minutes, or until golden and crispy. Alternatively, you can grill the bread if you prefer.

3. Assemble the Topping: Rub a cut clove of garlic on the surface of each toasted bread slice. Spoon the tomato mixture over each slice.

4. Halloween Twist: Take the fresh mozzarella slices and use a ghost-shaped cookie cutter to cut out little cheese ghosts. Place a mozzarella ghost on each bruschetta. Use balsamic glaze to add eyes and a mouth to each ghost for a spooky look.

5. Serve: Finish with an optional drizzle of balsamic glaze and serve immediately.
